13 - 1/4 cup cotija or feta cheese, crumbled

# Directions:

01 - Bring a large pot of salted water to a rolling boil. Add rotini pasta and cook according to package directions until al dente. Drain thoroughly in a colander and set aside.
02 - While pasta cooks, combine Greek yogurt, cilantro, lime juice, lime zest, garlic, olive oil, cumin, chili powder, salt, and black pepper in a blender or food processor. Blend until completely smooth and vibrant green.
03 - Transfer cooked rotini and shredded chicken to a large mixing bowl. Pour the cilantro-lime yogurt sauce over the top and toss thoroughly until every piece is evenly coated.
04 - Taste the dish and adjust seasoning with additional salt or pepper if needed. Serve immediately, topped with crumbled cotija or feta cheese, extra chopped cilantro, and fresh lime wedges.

# Expert Suggestions:

01 -
  • The creamy Greek yogurt base feels indulgent while keeping things light enough for a weeknight dinner that wont weigh you down
  • That zingy lime and fresh cilantro combination wakes up your tastebuds in a way regular creamy pasta never could
02 -
  • Blending the sauce too long can make it separate and get weirdly thin, so just pulse until smooth and stop there
  • Adding the sauce to warm pasta helps it coat everything better than trying to toss it with cold noodles
03 -
  • Toast your cumin in a dry pan for 30 seconds before adding it to the sauce for deeper flavor
  • Reserve a splash of pasta water before draining to help loosen the sauce if it gets too thick
